Here’s a speedy way to use up #zucchini and pack some nutrients into a yummy meal. I made this for breakfast, but it would be delicious for any time of day. It could be the entire meal or a side dish. I think it would be fun to cook this over an open fire pit sometime!

It’s harvest time again and like many of you, we are wondering what to do with it all! So many zucchini, summer squash, carrots and other yummy harvest vegetables. If you missed our post on how to preserve garden vegetables be sure to check it out for some easy ways to make it last longer. But back to this delicious summer vegetable chowder recipe.
After my garden is rototilled in the fall, I buy the cheapest, largest bag of oats to spread over it. Oats will grow fairly quickly – as long as you don’t wait until November to rototill! Oats will winter kill as well.

I used to work at a ski resort and they had delicious vegetarian lasagna. Since then I’ve searched for a replacement recipe. While this vegetarian lasagna recipe is a red sauce and that one was a white sauce, I really like this option! My bf isn’t a fan of the white sauce version… and I’m not sure if it’s healthy anyway but this version is! You can use whatever vegetables you would like but the following is what I did.
