The coronavirus has millions of people rushing to the stores and hoarding items like toilet paper. It’s a scary time and our big concern isn’t TP. These sisters are both wise shoppers and go to places like Sams Club to do our shopping for most items. When there is a sale, we stock up so paper products were the least of our concern. Our concern was fresh produce and keeping vegetables in our daily diet. Here are a few ways we’ve learned to stretch supplies during the coronavirus.

After my garden is rototilled in the fall, I buy the cheapest, largest bag of oats to spread over it. Oats will grow fairly quickly – as long as you don’t wait until November to rototill! Oats will winter kill as well.
Harvest time is here in my garden and with it thoughts come for how to preserve garden vegetables. I’ve kept up fairly well with my zucchini and tomatoes, but there’s a limit to how much one family can eat! There are easy ways to preserve garden vegetables for another time. And some of my ways are below!
I used to work at a ski resort and they had delicious vegetarian lasagna. Since then I’ve searched for a replacement recipe. While this vegetarian lasagna recipe is a red sauce and that one was a white sauce, I really like this option! My bf isn’t a fan of the white sauce version… and I’m not sure if it’s healthy anyway but this version is! You can use whatever vegetables you would like but the following is what I did.
