We love salad recipes any time of year, but we especially love salads in the summer when we can include fresh fruits and veggies from our garden. There’s nothing quite like home grown produce that you’ve picked yourself. Of course, if you’re in a place where you can’t have a garden, finding a local farmer’s market is the next best thing. Either way, these delicious summer salad recipes will quickly become a favorite in your home. [Read more…]

My family and I love this stuffed shells recipe. When our extended family gets together, it’s often a request of theirs. And the BEST part is it makes 2 pans so I freeze one for later! These are definitely a favorite that you should try.
Here’s a speedy way to use up #zucchini and pack some nutrients into a yummy meal. I made this for breakfast, but it would be delicious for any time of day. It could be the entire meal or a side dish. I think it would be fun to cook this over an open fire pit sometime!
A frittata is an Italian dish made with fried beaten, or whipped, eggs and resembles a Spanish omelet.
Do you have #zucchini coming out of your ears? If you have a garden and it’s harvest time, then I’m sure the answer is yes! Every year my mother gives away tons and tons of zucchini to neighbors and friends. Even though she freezes, bakes and practically bathes in it, there is always MORE! For some reason, I can’t grow zucchini (the last 2 years) but luckily Emily can and we visited last week. Let the zucchini harvest games begin!
Before you discount this Zucchini Pizza Crust recipe as too “green” or healthy, it’s a fantastic way to enjoy pizza without the heavy feeling. AND a great way to use up some zucchini. Ever roasted cauliflower? Ever roasted it and then made soup from it? I hadn’t, but let me tell you: I love the result! This is an easy and healthy vegetarian recipe! Plus an added benefit is how incredible the spices smell as the soup heats. The longest part is the roasting so it might be a good fall or winter recipe too but in the summer also ….

Here’s what to do:
Hands down, this easy potato salad recipe is the best I’ve ever had… EVER. And I’m proud to say it was passed down from my mom. She’s one amazing cook and I’m glad I paid attention for this recipe. My family loves how creamy and flavorful it is and I love that it’s a healthy potato salad. I usually make a large amount for a party but below is a potato salad recipe for a few people that serves 4-5. [Read more…]
If you are looking for a healthy vegetarian soup for a main course, look no more! I made this for my boyfriend’s vegetarian sister and we all loved it! I actually doubled the batch! To be completely honest, my boyfriend added a little spice to his (meat) but his sister enjoyed it as is and so did I. I’m sure you will too! [Read more…]
I used to work at a ski resort and they had delicious vegetarian lasagna. Since then I’ve searched for a replacement recipe. While this vegetarian lasagna recipe is a red sauce and that one was a white sauce, I really like this option! My bf isn’t a fan of the white sauce version… and I’m not sure if it’s healthy anyway but this version is! You can use whatever vegetables you would like but the following is what I did. After it was cooked, I added garlic salt to mine. I just prefer a little more zap to my flavors. Everyone else loved it as is. I’m sure you will too! [Read more…]
Tomatoes don’t speed up their ripening for the cold weather. Yes, you can pick tomatoes and put them in a cardboard box or paper bag to ripen quickly but what about the ones that don’t ripen? I’ve never tried fried green tomatoes but every fall I am reminded of them. One of our Dad’s favorite movies was Fried Green Tomatoes (Widescreen Collector’s Edition). In fact, it seemed every time I went to visit him, he was watching that movie. He said he never tried fried green tomatoes. I wish now I had made them for him. He would have loved them! So this easy Fried Green Tomato recipe, I dedicate to Dad.
It’s harvest time in the garden. Here’s one idea for using up the bounty: a healthy, fairly fast, colorful Garden Vegetable Omelette! I LOVE fresh veggies, but they can be a bit overwhelming at times….
