Slow Cooker Salsa Chicken is one of those EASY Crockpot meals in the Sisters Know Best Crockpot Freezer Meal Series. I wish when I bought my ingredients I had purchased enough to make a bunch of these. I only made 2 batches of this one. 🙁 It’s healthy, quick, and flavorful! Not to mention versatile. The next time we have it, the family wants to try it as a burrito. I’m happy with it as is on rice… but I will try it with some black beans added in.
I know you have seen the post about salads in a mason jar a thousand times already but this one is a little different. I tried the #Salads In A Jar the way others said to and no matter how many days they sat in the jars (1-6), they were still soggy. Even on day 1. I used to work at a ski resort and they had delicious vegetarian lasagna. Since then I’ve searched for a replacement recipe. While this vegetarian lasagna recipe is a red sauce and that one was a white sauce, I really like this option! My bf isn’t a fan of the white sauce version… and I’m not sure if it’s healthy anyway but this version is! You can use whatever vegetables you would like but the following is what I did. Ha ha!! Healthy and brownies in the same title! My sister Chris challenged me to come up with a healthy brownie recipe a few weeks ago after she published her own healthy brownie recipe. She nailed it when she said that I’m an organic, natural kind-of person. I like that she makes me think and urges me outside my comfy box, but — gee, I’ve got stuff going on and little time to come up with a wa-zoo recipe! Ah, the pressure…. Tis the season for pumpkins, however; and adding veggies to dessert makes it healthy automatically, in my opinion. Right? Right?
Anyway, following is my response:
Healthy brownies? Really? Is there such a thing? Maybe, but do they taste as good as the real thing? I’m here to say, YES THEY DO!
Emily and I differ on recipes like this. Just be warned… she is a very natural, organic type of person and I am a “if it tastes good, I like it!” type of person. She would frown on the artificial sweetener portion of this recipe so I challenge her to give me her BEST all natural ingredient brownies that are still healthy in calories. Think she will? Hmmm…
