Zesty Vegetable and Beef Meatloaf Recipe

This zesty beef meatloaf recipe is one of my favorites. The best part about it is that touch of spicy that most meatloaf recipes don’t have. AND the added nutrients from the vegetables is a bonus. When we make this meatloaf we make a bunch of them and throw them in the freezer for a quick and easy meal. During these times, being able to plan ahead matters. When I go shopping I go to two places. I go to Sam’s Club to buy my meats, canned goods, and a few other items and I go to my local store for the remainder of the items. If you’ve ever shopped at Sam’s you know all about bulk and needing a plan to use up what you buy. This meatloaf recipe does just that!

Ingredients
  • 1 Tbsp coconut oil
  • 1/4 Medium Onion diced
  • 1/2 Medium Red Bell Pepper chopped
  • 2 Cups Baby Spinach
  • 1 Clove garlic minced
  • 1/2 tsp Chili Powder
  • 1/2 tsp Sea Salt
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Dried Thyme
  • 1/4 tsp Cayenne
  • 1 lb Ground Beef
  • 1 Egg
  • 1/4 Cup Almond Flour
Servings: People
Instructions
  1. Preheat oven to 350°F. Grease a loaf pan with coconut oil.
  2. Heat coconut oil in a pan over medium heat. Add diced onion and chopped pepper. Saute until tender.
  3. Add spinach, minced garlic, and spices. Saute until spinach is wilted. Remove from heat.
  4. Combine ground beef, egg, and almond flour in a bowl with your hands.
  5. Add cooled sauteed vegetables to the bowl and mix all up with your hands.
  6. Move the mixture into a loaf pan and press evenly into the pan.
  7. Bake for 45 minutes.
