This stir fry is quick to make, healthy, and packed with fresh flavors. It’s one of those dishes you can turn to on busy nights or when you want to make the most of your garden zucchini.

  • Fast and Easy – The entire dish comes together in under 30 minutes.

  • Healthy Comfort Food – You’ll feel full and satisfied without the carb crash.

  • Versatile – Swap the protein or vegetables to fit what you have on hand.

  • Fresh Flavors – Ginger, garlic, and soy sauce create a bold, savory sauce that ties everything together.

With all these benefits, you’ll find yourself making it over and over again.

Let’s Talk Ingredients

This dish starts with lean beef sliced thin so it cooks quickly while staying tender. The mushrooms add an earthy flavor that balances the savory sauce. Zucchini noodles, or “zoodles,” bring a light, crisp texture that soaks up the sauce beautifully while keeping the dish low-carb.

The sauce is a simple but powerful mix of soy sauce, sesame oil, rice vinegar, and ginger. Garlic adds depth while a hint of brown sugar balances the salty flavors. A splash of hoisin sauce gives richness; and if you like heat, crushed red pepper flakes take it up a notch.

Fresh vegetables like bell peppers and green onions brighten the dish and add crunch. Together, they create a stir fry that feels both satisfying and refreshing.

Step-by-Step Cooking Tips

The key to this recipe is prepping your ingredients before you start cooking. Since stir fry moves fast, having everything chopped and ready makes the process smooth.

Start by whisking together the sauce ingredients so the flavors are ready to go. Sear the beef quickly in a hot pan until browned but not overcooked.  This helps it stay tender. Remove the beef.  Next, toss in the mushrooms, peppers, and garlic. They’ll cook in just a few minutes.  You’ll want them crisp but softened enough to release flavor.

Add the zucchini noodles near the end since they only need a short stir to warm through. Overcooking will make them watery, so keep the heat high and the cooking time short. Finally, return the beef to the pan and pour on the sauce.  Toss everything until coated and glossy.

Garnish with sesame seeds or chopped green onions for that restaurant-style finish.

Equipment

  • Long tongs – Perfect for tossing zucchini noodles and vegetables quickly in the pan.

  • Spiralizer – Used to turn fresh zucchini into noodles with ease.

  • Large nonstick skillet or wok – Essential for high-heat cooking to sear beef and stir fry vegetables evenly.

  • Mixing bowl – Handy for whisking together the sauce ingredients before cooking.
