Ingredients
  

For the Stir Fry:

  • 1 ½ lb 680g flank steak or sirloin, thinly sliced against the grain
  • 1 tbsp cornstarch
  • 2 tbsp low sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tsp olive oil for cooking
  • 3 medium zucchini about 1 lb / 450g, spiralized
  • 1 cup 70g sliced mushrooms
  • 1 red bell pepper thinly sliced
  • 3 cloves garlic minced
  • 1- inch piece of fresh ginger grated

For the Sauce:

  • ¼ cup low sodium soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • ½ tsp crushed red pepper flakes optional
  • 1 tsp honey or brown sugar

Instructions
 

  • Prepare the Sauce: In a small bowl, whisk together soy sauce, oyster sauce (if using), rice vinegar, garlic, and ginger. Set aside.
  • Cook the Beef: Heat 1 tablespoon sesame oil in a large skillet over medium-high heat. Add beef slices and stir-fry for 2–3 minutes until browned but not overcooked. Remove from skillet and set aside.
  • Sauté the Vegetables: In the same skillet, add remaining sesame oil. Toss in mushrooms and red bell pepper, sautéing for 3–4 minutes until softened.
  • Add Zucchini Noodles: Add zucchini noodles and stir fry for another 2 minutes. Don’t overcook—they should remain slightly crisp.
  • Combine Ingredients: Return beef to the pan and pour in the sauce. Stir to combine everything evenly.
  • Thicken (Optional): If you prefer a thicker sauce, mix cornstarch with water to form a slurry and stir it into the pan. Cook for 1–2 minutes until the sauce thickens slightly.
  • Serve: Plate immediately, garnishing with chopped green onion and sesame seeds if desired.

  • Zucchini noodles cook quickly—avoid overcooking to prevent sogginess.
  • Great low-carb dinner option with big flavor.
  • Feel free to use pre-spiralized zucchini to save time.
