We’re huge pasta lovers in my house. I know all about the carbs and how they’re not healthy, but I can’t help it. Pasta is sooo good! And easy. Before trying this recipe, I’d heard of spaghetti squash, but I’d never had it before. I really wasn’t sure to expect.

Turns out, I am in LOVE with this recipe! We were skeptical about using spaghetti squash instead of actual pasta… the outcome? This is going to become a once a week meal for us! The Laughing Cow Swiss adds just the right amount of cheese to combine the tastes of all the vegetables. And the best part? You guessed it! It’s only 2 smart points per serving! Spaghetti Squash Primavera

Ingredients
  

  • 5 Cups Spaghetti Squash cooked (3 1/2 pound squash)
  • 1 Cup Onion thinly sliced
  • 1/2 Cup Red Pepper thinly sliced
  • 1/2 Cup Green Pepper thinly sliced
  • 1 Cup Broccoli chopped
  • 1 Cup Asparagus chopped
  • 2 Cups Cherry Tomatoes halved
  • 1 Tbsp Minced Garlic
  • 1 1/2 tsp Italian Seasoning
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp salt
  • 1/4 tsp Black Pepper
  • 3 Wedges Laughing Cow Spreadable Cheese Wedges, Creamy Swiss, Light cut in to tiny pieces
  • 1/4 Cup Grated Parmesan Cheese

Instructions
 

  • Preheat oven to 450°
  • Preheat oven to 450°.
  • Microwave squash for 7 minutes. Cut long way in half and remove seeds.
  • Place in large baking dish, cut sides down, and fill pan with 1/2 inche of water.
  • Bake for 40 minutes.
  • Meanwhile, bring large skillet to medium high heat. Spray with pan spray and add bell pepper, onion, broccoli, and asparagus. Cook for 5 minutes.
  • Add cherry tomatoes, garlic and italian seasoning and stir together.
  • Remove from heat and cover to keep warm.
  • Use a fork to shred spaghetti squash. Take 5 cups of the spaghetti squash and place in large bowl.
  • Add laughing cow cheese, parmesan cheese, garlic powder, onion powder, salt and black pepper to the spaghetti squash and mix thoroughly.
  • Plate the spaghetti squash mixture and top with the vegetables.
