Turkey Fried Rice
Ingredients
- 8 ounces turkey breast cut into 1” pieces
- ½ tablespoon butter
- ½ cup chopped onions
- 1 clove garlic minced
- ¾ cup cooked rice white or brown
- 1 large egg
- ½ cup peas
- ½ cup corn
- 1 tablespoon low sodium soy sauce
- Salt and pepper to taste
Instructions
- Saute onion in butter in a skillet over medium heat. Cook for 2 minutes. Add garlic and cook 1 more minute. Brown the turkey pieces and cook another 3 minutes. (The turkey won’t be fully cooked yet.) Remove turkey and set aside.
- Add the cooked rice to the pan, stir and cook 30 seconds. Move the rice, onions, and garlic to one side of the pan.
- Add the whisked egg to the center of the pan and mix it in with the rice/onion mixture until it’s cooked.
- Add the peas and the corn to the pan and cook, stirring for 1 minute. Return turkey to the pan and cook until turkey reaches 165°F.
- Stir in the soy sauce and taste. Add salt and pepper, if necessary.
