Turkey Fried Rice
Chunks of turkey are pan-fried with vegetables, egg, and rice.

- 8 ounces turkey breast cut into 1” pieces
- ½ tablespoon butter
- ½ cup chopped onions
- 1 clove garlic minced
- ¾ cup cooked rice white or brown
- 1 large egg
- ½ cup peas
- ½ cup corn
- 1 tablespoon low sodium soy sauce
- Salt and pepper to taste
Saute onion in butter in a skillet over medium heat. Cook for 2 minutes. Add garlic and cook 1 more minute. Brown the turkey pieces and cook another 3 minutes. (The turkey won’t be fully cooked yet.) Remove turkey and set aside.
Add the cooked rice to the pan, stir and cook 30 seconds. Move the rice, onions, and garlic to one side of the pan.
Add the whisked egg to the center of the pan and mix it in with the rice/onion mixture until it’s cooked.
Add the peas and the corn to the pan and cook, stirring for 1 minute. Return turkey to the pan and cook until turkey reaches 165°F.
Stir in the soy sauce and taste. Add salt and pepper, if necessary.
