Turkey Fried Rice

Chunks of turkey are pan-fried with vegetables, egg, and rice.

Ingredients
  

  • 8 ounces turkey breast cut into 1” pieces
  • ½ tablespoon butter
  • ½ cup chopped onions
  • 1 clove garlic minced
  • ¾ cup cooked rice white or brown
  • 1 large egg
  • ½ cup peas
  • ½ cup corn
  • 1 tablespoon low sodium soy sauce
  • Salt and pepper to taste

Instructions
 

  • Saute onion in butter in a skillet over medium heat. Cook for 2 minutes. Add garlic and cook 1 more minute. Brown the turkey pieces and cook another 3 minutes. (The turkey won’t be fully cooked yet.) Remove turkey and set aside.
  • Add the cooked rice to the pan, stir and cook 30 seconds. Move the rice, onions, and garlic to one side of the pan.
  • Add the whisked egg to the center of the pan and mix it in with the rice/onion mixture until it’s cooked.
  • Add the peas and the corn to the pan and cook, stirring for 1 minute. Return turkey to the pan and cook until turkey reaches 165°F.
  • Stir in the soy sauce and taste. Add salt and pepper, if necessary.
