Crockpot Corn Chowder

Who doesn’t love potato and corn chowder?  We have the easiest recipe that’s sure to satisfy the entire family!

Not to sound callous, but you literally ‘toss’ all the ingredients in the slow cooker, set the heat, and enjoy!  This meal works well as a party food as well.  Of course, you can add other ingredients.  For instance, meat eaters will enjoy some bacon tossed in.  Or you can have bacon bits as a condiment.  Ham is another protein that would pair well in this potato and corn chowder!  Nothing tastes like fall other than chowder!

If you’re a gardener, this recipe will be enhanced by your homegrown veggies.  Add in some garlic, onions, maybe even zucchini from the garden.  Doesn’t zucchini find it’s way into lots of dishes in the fall?  LOL!

Crockpot Corn Chowder

Slow Cooker Potato and Corn Chowder Recipe

Cook Time 6 hours
Total Time 12 hours 20 minutes
Servings 10 People

Ingredients
  

  • 1 1/2 Pounds Small Red Potatoes Cubed
  • 1 1/2 Pounds Small White Potatoes Cubed
  • 16 Ounce Bag of Frozen Corn
  • 6 Cups Chicken Stock
  • 1/2 Medium Onion Minced
  • 1 Small Red Pepper Minced
  • 1 1/2 Teaspoons Dried Thyme
  • 1 Teaspoons Garlic Powder
  • 1 Teaspoons Onion Powder
  • 2 Teaspoons Oregano
  • 1/2 Teaspoon Celery Salt
  • 1/2 Teaspoon Black Pepper
  • 4 Tablespoons Butter Reserved
  • 1 Cup Heavy Cream Reserved

Instructions
 

  • Rinse and cut potatoes in to cubes or halves. Place in crock pot.
  • Add frozen corn.
  • Add rest of ingredients except butter and heavy cream.
  • Cook on low 8 hours.
  • 15 minutes before serving, shut off slow cooker and add butter and heavy cream.
