This coconut chicken is packed with extra protein since it uses protein powder as part of the outside coating. Doesn’t that just sound great? Coconut chicken – it sounds so tropical! And you know what – it is! While the recipe doesn’t call for it, a side of mango, pineapple, or melon could be really tasty with this awesome main dish! If you need to unwind, try a mojito to keep the tropical theme going. And don’t forget the little paper umbrellas.

Why This Coconut Chicken Is So Good

You’ll notice that the recipe also uses protein powder (ViSalus protein powder). No, coconut chicken isn’t a shake! You can cook with protein powder too! We made these awesome blueberry pancakes with protein powder. It’s a great way to reduce carbs and amp up your protein intake.

In this dinner entrée, the protein powder combined with coconut creates a great crust that’s a party in your mouth and keeps the chicken moist and tender. Although it takes an hour to bake, the prep work is quick, so you can make it after work. And it’s kind of fun, too!

Coconut chicken also stores well. Make it on Sunday and have lunches or dinners for the whole week. The leftovers are great! For sides, if you’re not into tropical fruit, think about rice pilaf and green beans.

Ingredients
  

  • 2 Scoops Protein Powder
  • 3/4 Cups Unsweetened Shredded Coconut
  • 2 Eggs Beaten
  • 1 Pound Boneless Skinless Chicken Breasts

Instructions
 

  • Preheat oven to 350°.
  • Mix protein powder and coconut together.
  • Dip chicken in beaten egg.
  • Dip chicken in protein and coconut mixture to thoroughly coat.
  • Place chicken on greased pan.
  • Bake for 1 hour or until chicken is no longer pink when cut in the middle.
