This recipe appears in our cookbook “Cooking for One – Not an Army” along with other delicious recipes. It’s made for one, but you can easily double (or triple) this recipe for company! If you didn’t get a copy yet, our book is on Amazon right here!

Ingredients

The recipe uses ice cream, milk, heavy cream, and fruit as the main ingredients. The ice cream provides the creamy base while the milk and heavy cream enhance the texture. You can use fresh, frozen, or canned fruit depending on what you have on hand. Vanilla extract adds a touch of flavor. Add optional extras like whipped cream, sprinkles, or chocolate curls on top for an extra treat and a nod towards decadent.

Tips & Tricks

Blending: Blend all ingredients until smooth. If the shake is too thick, add a bit more milk; if it’s too thin, add more ice cream.  This Ninja is perfect for this recipe.  Plus, it’s really easy to dismantle for cleaning, a breeze to operate, and stores compactly.
Fruit Choice: Use ripe fruit for better flavor. Frozen fruit can make the shake thicker and colder.  Canned fruit should be well-drained to avoid extra liquid.
Serving Size: The recipe is for one serving, but you can easily double or triple it for more servings.  We’re thinking milkshake parties!

Substitutions & Variations

Dairy-Free Option: Substitute the dairy ingredients with almond milk, coconut cream, and dairy-free ice cream.
Different Flavors: Try different combinations of fruits and ice cream flavors to create your own version.
Sweetness: If the shake isn’t sweet enough, add a bit of honey or sugar.

What to Serve with It

This milkshake pairs well with light snacks like cookies, a slice of cake, or even a fruit salad. It’s also a nice finish to a light meal.  Consider our Spinach, Mushroom Onion Quiche as your main and Chocolate Lava Cake as a dessert option.

Leftovers & Storage

Milkshakes are best enjoyed fresh. If you have leftovers, they can be stored in the freezer, but the texture may change. Re-blend before serving.
