Farro and artichoke salad is packed with flavor! This dish is quickly becoming a favorite in our house and we have it a couple times a week. It makes a great leftover so I have it more than twice a week some weeks. Faro is a cross between pasta and rice so it’s like a pasta salad with health benefits of a natural grain as its base. It may be considered an Italian dish but if you add feta to the salad it quickly becomes Greek. Keep in mind, adding feta does slightly up the calorie count but mmm mmm, it’s so good!

People with Celiac or gluten sensitivity will need to substitute the farro for something else as it’s not gluten friendly. Rice or gluten free orzo can work well for this.  But if you are able to have it, do try it since faro has amazing health benefits.

Farro and Artichoke Salad Great Cold Meal

With the warmer weather, it’s great to have a cool meal that’s healthy and fulfilling. This dish can be made beforehand and served chilled. It stores well in the refrigerator for a day or two. Pack it for lunch at work or serve it for dinner – either way, it’s meal that’s filling and healthy.

This farro and artichoke salad is also great for picnics or other daytime summer excursions. Just make sure you pack the spoons or forks! Because there’s no mayonnaise or eggs, if you don’t use the feta, you don’t even need ice if you’d rather not pack it. Meals that don’t require a lot of upkeep are my favorite! How about you?

Farro and Artichoke Salad

Ingredients
  

  • 3 Cups Water
  • 1/4 Cup Green Pepper diced
  • 1/4 Cup Red Pepper diced
  • 1/4 Cup Onion diced
  • 1 Can artichoke hearts without oil quartered
  • 1/2 Cup Apple Cider Vinegar
  • 1 Tbsp Dried Basil
  • 1/8 Cup Spicy Mustard
  • 2 tsp lemon juice
  • Salt & Pepper to taste
  • 1/4 Cup Oil

Instructions
 

  • Boil farro as directed.
  • While farro is cooking, cut up vegetables and put in a medium sized bowl.
  • In a smaller bowl combine the apple cider vinegar, basil, spicy mustard, lemon juice, salt and pepper and oil together
  • Mix all ingredients together and serve warm or chilled.
