Ingredients
  

  • 2 tablespoons seasoned breadcrumbs
  • 2 tablespoons shredded parmesan cheese divided
  • ¼ teaspoon Italian seasoning
  • teaspoon garlic powder
  • Salt and pepper
  • 2 tablespoons butter melted
  • 8 ounces boneless skinless chicken breast
  • 2 tablespoons mozzarella cheese shredded or sliced
  • Optional for topping: chopped parsley
  • 1 cup cooked spaghetti
  • 1/3 cup marinara warmed

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Mix breadcrumbs, 1 tablespoon of parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Set aside.
  • Melt the butter in a separate medium-sized bowl. Dip the chicken in melted butter, coating it completely.
  • Dredge the chicken in the breadcrumb mixture, making sure both sides are well coated.
  • Place the chicken on a small, greased baking sheet and pour the remaining melted butter from the dish over the chicken. Bake 20 minutes. (Chicken won’t be fully cooked.)
  • Remove chicken from the oven and top with mozzarella cheese and 1 tablespoon of Parmesan cheese.
  • Return the chicken to the oven and bake for another 5-10 minutes until the chicken is fully cooked (165°F) and cheese is melted and bubbly.
  • Remove the chicken from the oven and let the chicken rest for 5 minutes.
  • Place cooked spaghetti and marinara on a plate and top with chicken parmesan. Garnish with chopped parsley.
