Weight Watchers Chicken Fajita Crockpot Recipe

I found the easiest, most delicious Weight Watchers Chicken Fajita recipe for the crockpot. I found the original recipe on Pinterest but it didn’t have enough “oomph” to it.  I doctored it up.  Now it’s my go to Weight Watchers recipe. The original was a zero point recipe. Mine is a 1 smart point chicken recipe but that one point is so worth it!  We’ve made a lot of freezer meals for the crockpot and this one works also.

I’ll list out the ingredients and directions below if you want to just scroll down, but this is the story of what I did. I really didn’t want to go grocery shopping and I love “using what I have”.  Between the deep freezer and the pantry, I was able to make this awesome recipe.  Plus, I’m always looking for Weight Watchers recipes to put on our site SKBrecipes.com. I put 4 chicken breasts in the bottom of my crockpot and covered with black-eyed beans and corn.  I added all the other ingredients and then mixed everything together.  Easy, right?

To keep this chicken fajita crockpot recipe healthy, use low fat ingredients when possible.  Your family won’t know the difference.  Trust me!

Weight Watchers Chicken Fajita Crockpot Recipe

Servings 0

Ingredients
  

  • 4 boneless skinless chicken breast
  • 1 package chicken fajita seasoning
  • Onions & peppers
  • 1 can Black-eyed beans
  • 1 can low sodium corn
  • 1 cup chicken broth
  • Shredded Mexican or cheddar cheese
  • Salsa
  • Taco shells
  • Sour cream
  • Weight Watchers Version
  • 3 ounces. shredded chicken per taco shell - 2 SP
  • 1/4 cup fat fFree shredded mozzarella - 0 SP
  • 1 tablespoon salsa - 0 SP
  • 1 tablespoon sour cream - 1 SP
  • Fat free taco shells - 2 SP

Instructions
 

  • Place chicken in bottom of crockpot.
  • Pour in 1 cup of chicken broth
  • Add seasoning package
  • Add peppers and onions
  • Stir well so everything is mixed together
  • Cook on low for 8 hours or high for 4 hours.
  • About 1/2 hour before fully cooked shred chicken in crock pot and stir again and let finish cooking - this helps with the flavors blending.
  • Add cheese to taco shell
  • Place chicken mixture on top of cheese
  • Add salsa
  • Add another layer of cheese
  • Place in toaster oven or microwave for 10 seconds to melt cheese
  • Top with sour cream
