With only five minutes prep time and just 15 minutes in the oven, you can easily make this side after work or right before company arrives. It’s so simple, you can even prepare and cook it while your guests are enjoying a crudité platter or some chips and salsa.

The lemon juice and crushed red pepper add some tang and spice to an otherwise bland veggie. Even the most ardent broccoli hater might enjoy it when prepared this way. It’s elegant in its simplicity and pairs well with a wide variety of main dishes. My husband, who can’t go a meal without some form of meat, likes this roasted broccoli with baked chicken and rice pilaf. It’s also great with steak and mashed potatoes.

A great vegetarian idea for this roasted broccoli is to serve it with marinated tofu and roasted potatoes. Or you could roast an entire vegetable medley with mushrooms using this same method and create a complete meal. No matter what you pair it with, this roasted broccoli recipe is a delicious side-dish.

Roasted Broccoli

Ingredients
  

  • 1 Head Broccoli
  • 1 Wedge Lemon or lemon juice
  • 1/4-1/2 tsp Crushed Red Pepper to taste
  • Pan Spray

Instructions
 

  • Preheat oven to 475°.
  • Spray a metal baking pan.
  • Wash and cut broccoli.
  • Place broccoli in a single layer and spray with pan spray.
  • Bake for 14-16 minutes.
  • Drizzle with lemon juice and sprinkle with as much of the crushed red pepper as you like.
