Mmmmm! This is another of our favorites from the Sisters Know Best Crockpot Freezer Series. We like it so much because the sausage is actually turkey burger flavored like sausage so it’s healthy and hearty. Get the sausage seasoning recipe here. This Crockpot Sausage and Bean Supper recipe is easy to make, freezes well, and can feed a lot of people. We served it 2 different ways. I opted for it on rice and Bill put his in a wrap. Bill and I had ours completely different and we both loved it! He had his on a sub roll with ketchup, mustard, relish (he’s the condiment king). I had mine with mustard and green tobasco to make it a little spicy.

Do you prefer sweet or spicy?

Zucchini Frittata

September 7, 2015 By Emily Gammon Leave a Comment

Here’s a speedy way to use up #zucchini and pack some nutrients into a yummy meal.  I made this for breakfast, but it would be delicious for any time of day.  It could be the entire meal or a side dish.  I think it would be fun to cook this over an open fire pit sometime!

A frittata is an Italian dish made with fried beaten, or whipped, eggs and resembles a Spanish omelet.

Ever roasted cauliflower?  Ever roasted it and then made soup from it? I hadn’t, but let me tell you:  I love the result!  This is an easy and healthy vegetarian recipe! Plus an added benefit is how incredible the spices smell as the soup heats.  The longest part is the roasting so it might be a good fall or winter recipe too but in the summer also ….

Vegetarian Lasagna Recipe

February 6, 2015 By Christina Gammon Leave a Comment

Vegetarian Lasagna RecipeI used to work at a ski resort and they had delicious vegetarian lasagna. Since then I’ve searched for a replacement recipe. While this vegetarian lasagna recipe is a red sauce and that one was a white sauce, I really like this option! My bf isn’t a fan of the white sauce version… and I’m not sure if it’s healthy anyway but this version is! You can use whatever vegetables you would like but the following is what I did. After it was cooked, I added garlic salt to mine. I just prefer a little more zap to my flavors. Everyone else loved it as is. I’m sure you will too! [Read more…]

Kale Salad

February 2, 2015 By Emily Gammon 1 Comment

Kale SaladIt’s the dead of winter here in Maine.  Yup, everything “garden-y” is dead.  Kind of depressing unless you buy fun green veggies and make amazing salads that encourage thoughts of warmer times to come.  Enter in Kale Salad!

Years ago a friend had given me some kale from her garden.  Oh, goody I thought.  Then I was embarrassed not to know how to eat it — cook it? chop it? steam it? add to soups?  Absolutely all of those things can be done with kale!  I haven’t forgotten the kale chips that are all the rage now, but it’s not something I have done — yet.

This version of kale salad is best enjoyed the following day.  The kale will soften some and the flavors will meld into a deliciousness that is worth the wait.  Trust me! [Read more…]
