Ingredients for Healthy Bell Pepper Taco Boat Bake

This recipe uses fresh and flavorful ingredients to create a healthy yet indulgent meal:

  • Bell Peppers: Red, yellow, orange, and green peppers make the perfect edible “boats” with a sweet and slightly crunchy base.
  • Ground Turkey: A lean, protein-packed filling that absorbs the Mexican spices beautifully.
  • Chili Powder, Cumin, Salt, and Pepper: Classic taco seasonings that bring the flavors to life.
  • Salsa: Adds moisture and a zesty kick to the filling.
  • Light Shredded Sharp Cheddar Cheese: A little cheese goes a long way for flavor while keeping it Weight Watchers friendly.

Tips & Tricks

  • Add Toppings: Garnish with light sour cream, guacamole, or fresh cilantro for added flavor. (Note: 2 tablespoons of light sour cream add an extra 2 SmartPoints.)
  • Go Vegetarian: Substitute the turkey with legumes, black beans, or refried beans for a plant-based version.
  • Make It Spicier: Add diced jalapeños or a splash of hot sauce to the turkey mixture for more heat.

What to Serve with Bell Pepper Taco Boats

These taco boats are versatile and pair wonderfully with other dishes:

  • Corn and Black Bean Salad: Adds a refreshing contrast to the warm, cheesy boats.
  • Fresh Avocado Slices: Perfect for a creamy and healthy accompaniment.

Leftovers & Storage

  • Refrigeration: Store leftovers in an airtight container for up to 3 days.
  • Reheating: Warm in the oven at 350°F (175°C) for 10 minutes or in the microwave for 1–2 minutes.
