I loved making this Cilantro Lime #Chicken #Crockpot recipe because of the lime fragrance. Lemons and limes are so refreshing. I squeezed the lime in to my freezer bag when I prepared it and threw the peeling in my garbage disposal. It’s a great way to freshen it up! I had my chicken over rice and Bill had his in a wrap. We both thought it was delicious!

Ingredients
- 3 Boneless Skinless Chicken Breasts
- 2 Limes Juiced
- 1 Bunch Cilantro Chopped
- 1 16 Ounce Bag Frozen Corn
- 2 Cloves Garlic Minced
- 1/2 Red Onion Chopped
- 1 Can Black Beans Drained and Rinsed
- 1 Teaspoon Cumin
- Salt and Pepper To Taste
- Sour Cream Optional
- Salsa Optional
Instructions
- Put all ingredients, except sour cream and salsa in a freezer bag and freeze.
- Defrost the day before in refrigerator.
- Cook on low for 8 hours.
- Half hour before serving, shred the chicken and mix in with juices.
- Serve on tortilla shells or rice. Top with salsa and sour cream.
