Cilantro Lime Crockpot Chicken

I loved making this Cilantro Lime #Chicken #Crockpot recipe because of the lime fragrance. Lemons and limes are so refreshing. I squeezed the lime in to my freezer bag when I prepared it and threw the peeling in my garbage disposal. It’s a great way to freshen it up! I had my chicken over rice and Bill had his in a wrap. We both thought it was delicious!

Cilantro Lime Chicken Crockpot Freezer Recipe

Total Time 8 hours 15 minutes

Ingredients
  

  • 3 Boneless Skinless Chicken Breasts
  • 2 Limes Juiced
  • 1 Bunch Cilantro Chopped
  • 1 16 Ounce Bag Frozen Corn
  • 2 Cloves Garlic Minced
  • 1/2 Red Onion Chopped
  • 1 Can Black Beans Drained and Rinsed
  • 1 Teaspoon Cumin
  • Salt and Pepper To Taste
  • Sour Cream Optional
  • Salsa Optional

Instructions
 

  • Put all ingredients, except sour cream and salsa in a freezer bag and freeze.
  • Defrost the day before in refrigerator.
  • Cook on low for 8 hours.
  • Half hour before serving, shred the chicken and mix in with juices.
  • Serve on tortilla shells or rice. Top with salsa and sour cream.
