If you’re a fan of mint, try using it instead of vanilla. It creates an amazingly fresh taste that tastes perfect with the chocolate chips. Another tasty variation is to use butterscotch chips or mint chips instead of chocolate. Mix and match chips and vanilla or mint flavoring to create a diet-friendly cookie you’ll enjoy eating.
