Deli sliced roast beef and sliced Swiss cheese are wrapped around asparagus, fried in oil and served with a horseradish aioli (optional).

Ingredients
  

  • 3 asparagus spears peeled and destemmed
  • 6 slices deli roast beef
  • 3 slices Swiss cheese
  • ½ tablespoon oil
  • ½ tablespoon creamy horseradish
  • ¼ cup mayonnaise
  • Salt and pepper to taste
  • Lemon wedges optional

Instructions
 

  • Blanch asparagus in boiling water for 1 minute. Remove spears and pat dry.
  • Layer one slice of Swiss cheese on two slices of roast beef. Place an asparagus spear lengthwise on one end of the stack and roll up. Secure with a toothpick. Repeat the process for other two asparagus spears.
  • Gently saute the assembled rolls in a saute pan with ½ tablespoon of oil until the roast beef is golden brown on all sides. Remove the rolls from the pan and drain on a clean paper towel.
  • Whisk horseradish with mayonnaise until smooth. (Optional but highly recommended)
  • Serve asparagus rolls with horseradish aioli (optional). Squeeze with lemon, if desired.
