It’s the season for comfort foods. Fall is in the air, gardens are winding down, and our peppers are plentiful. We have a couple different stuffed pepper recipes for you to try. One of them is featured in our crockpot freezer meal series and uses cauliflower instead of rice. And the other is below.
This stuffed pepper recipe stands out because of it’s use of lentils. Lentils are known for being high in fiber and protein. These nutrition packed stuffed peppers are also delicious.
Stuffed Peppers with Lentils

Servings 6 people (1 pepper per person)
Ingredients
- 1 pound Sausage (or burger or combination) ground
- 6 peppers tops cut off and seeds and veins scooped out
- 1 medium Onion diced
- 2 cloves garlic minced
- 2 cups rice cooked
- 1 cup lentils cooked
- 3-4 cups Spaghetti Sauce I make my own with fresh tomatoes from the garden. 😉
- Salt and Pepper to taste
Instructions
- Prepare the peppers by cutting the tops off and scooping out the veins and seeds. Using a spoon is helpful in scooping out the veins. Rinse.
- Brown the sausage (or hamburger or combination) along with the garlic and onions. I also put little pieces of the green pepper tops in here.
- Warm your sauce - or make your own!
- Add cooked rice and lentils to the browned meat mixture.
- Place peppers in your baking dish with sides that are taller than the peppers and fill with the rice/lentil/meat filling. If you have leftover filling, place this around the peppers.
- Pour the sauce over the entire pan.
- Cover the dish and bake in a 350 degree oven for approximately 1:30.
