I’ll admit it. We were a little skeptical with this healthy guacamole type recipe but my husband LOVES guacamole and Cinco de Mayo was right around the corner so… I found this healthy Mexican dip recipe on Weight Watchers to try. It’s amazing and only 1 smart point per 3-tablespoon serving!
I altered it some from the Weight Watchers recipe. I didn’t want to use oil because of the added calories and I forgot to buy fresh cilantro so I substituted oregano and parsley for cilantro. I also changed some ingredient amounts to suit our taste buds. The recipe below is what I came up with and now we can’t get enough of it!
I think this healthy guacamole-style recipe could be combined with salsa or queso dip for an even more Mexican-inspired appetizer or meal. It’s great with your favorite tortilla chip or any other dipper. Just be sure you figure those calories into your daily intake if you’re one Weight Watchers or another calorie counting diet plan.
We found that having this the next day it was even better! It stored well in the refrigerator and the flavors seemed to blend together overnight.
