Cheesy Sweet Potato with Pickled Jalapeno was a party in our mouths! The sweet from the potato combined with the Monterey Jack and spice from the jalapenos is the perfect compliment to any meal! We found this recipe from Blue Apron. This dish is over-the-top delicious. And it makes for a great make-and-take to holiday parties!
Besides being full of the starchy, cheesy goodness you can only get from cheese potatoes, there’s a tasty kick from jalapenos that blends perfectly with Monterrey Jack cheese. It’s so good, you’ll want to eat the whole pan! Give it a try for Thanksgiving instead of candied yams or add it as a side to any meal.
Why Sweet Potatoes?
Did you know? Sweet potatoes are a rich source of beta-carotene which is essential for a healthy body. After consumption, beta-carotene is converted to vitamin A which benefits vision, immune system, and skin. And get this! Sweet potatoes are higher in fiber and protein than white potatoes! Difference Between Yams and Sweet Potatoes
Many people are confused about the difference between yams and sweet potatoes. Some use the term interchangeably. In fact, they are very different, and unrelated, tubers. Sweet potatoes are part of the morning glory family while yams belong to the lily family. True yams are sweeter, larger, and nutritionally inferior to sweet potatoes. A yam with brown or black scaly skin and off-white, purple, or red flesh. Yams grow in tropical climates and grow to be up to 150 pounds!
Sweet potatoes are far healthier for you. Although not as sweet as yams, they are ideal for any potato dish – including this amazing cheesy sweet potatoes with pickled jalapeno.

Cheesy Sweet Potato with Pickled Jalapeno
Ingredients
- 1 Medium Sweet Potato
- 2 Ounces Reduced Fat Shredded Monterrey Jack Cheese (or regular)
- 1 Ounce Sliced Pickled Jalapeno Peppers
- Pan Spray
- Salt & Pepper
Instructions
- Preheat oven to 450 degrees.
- Cut sweet potato into 1/2 inch thick rounds.
- Spray pan and sweet potato with pan spray.
- Sprinkle with salt and pepper.
- Roast 20 minutes.
- While the potatoes cook, roughly chop jalapenos.
- Remove sweet potatoes from oven and top with cheese and jalapenos.
- Bake for another 5 minutes until cheese is melted and bubbly.
