Weight Watchers Egg and Feta Mini Stuffed Pepper Appetizer Is a Hit With Any Crowd
This stuffed peppers appetizer is easy and quick to make. If your family is whining about how starving they are, you can whip these up in 10 minutes to give them something healthy to eat while you finish making dinner. You won’t need to worry about it spoiling their dinner. And it’s so good, they’ll eat without complaint, giving you a few moments of silence.
This appetizer is great either hot or cold. If you’ve got a few extra points to use, you can try some dipping sauces with this 2 smart point appetizer. Depending what you select, you’ll need to calculate the additional points.
Weight Watchers Egg and Feta Mini Stuffed Pepper Appetizer
Ingredients
- 1 Pound Mini Bell Peppers
- 4.5 Ounces Fat Free Crumbled Feta Cheese
- 2/3 Cups Liquid Egg Whites
- Black Pepper (optional)
- Pan Spray
Instructions
- Cut the top off peppers and remove the seeds and membranes.
- Mix together egg, feta, and black pepper.
- Scramble egg mixture in a large frying pan as you normally would cook scrambled eggs.
- Stuff peppers with the egg mixture.
- Add pan spray to frying pan and put heat on medium.
- Brown peppers on each side for 2-3 minutes until slightly brown.
- Serve hot or cold plain or with dipping sauces of your choice.
