Potato and Asparagus Quiche
Potatoes, asparagus, and onions baked in a cheesy quiche.

- ¾ cup baby red potatoes diced
- ¾ cup asparagus trimmed and chopped
- ½ cup sliced onions
- 2 cloves garlic minced
- 1 tablespoon oil
- ¼ teaspoon thyme
- Salt and pepper to taste
- 2 large eggs
- 4 tablespoons heavy cream
- ½ cup shredded Swiss cheese
Heat oven to 400°F (200 degrees C).
Toss potatoes, asparagus, onions, thyme, and salt and pepper in a medium bowl.
Spread vegetables on a baking sheet and roast until tender, about 15-17 minutes. Remove and set aside.
Reduce oven temperature to 350°F (177°C). Whisk together eggs and cream in a bowl.
Stir in the cheese and then the roasted vegetables.
Pour quiche into lightly greased 5-inch baking dish or dish of a similar size.
Bake 25 minutes, or until the top is lightly browned. Let quiche set 5 minutes before serving.
SERVING SUGGESTION: Crusty baguette pairs nicely with quiche.
