Potato and Asparagus Quiche

Potatoes, asparagus, and onions baked in a cheesy quiche.

Ingredients
  

  • ¾ cup baby red potatoes diced
  • ¾ cup asparagus trimmed and chopped
  • ½ cup sliced onions
  • 2 cloves garlic minced
  • 1 tablespoon oil
  • ¼ teaspoon thyme
  • Salt and pepper to taste
  • 2 large eggs
  • 4 tablespoons heavy cream
  • ½ cup shredded Swiss cheese

Instructions
 

  • Heat oven to 400°F (200 degrees C).
  • Toss potatoes, asparagus, onions, thyme, and salt and pepper in a medium bowl.
  • Spread vegetables on a baking sheet and roast until tender, about 15-17 minutes. Remove and set aside.
  • Reduce oven temperature to 350°F (177°C). Whisk together eggs and cream in a bowl.
  • Stir in the cheese and then the roasted vegetables.
  • Pour quiche into lightly greased 5-inch baking dish or dish of a similar size.
  • Bake 25 minutes, or until the top is lightly browned. Let quiche set 5 minutes before serving.

Notes

SERVING SUGGESTION: Crusty baguette pairs nicely with quiche.
