  • 4 cups watermelon seedless and cubed (about ½ medium watermelon)
  • 1 cup cucumber thinly sliced
  • ½ cup feta cheese crumbled
  • 2 tablespoons fresh mint chopped
  • 2 tablespoons red onion thinly sliced (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • Salt and black pepper to taste

Instructions
 

  • Add the cubed watermelon, sliced cucumber, crumbled feta, chopped mint, and red onion (if using) to a large bowl.
  • Drizzle with olive oil and lime juice, then season lightly with salt and pepper.
  • Toss gently to combine, being careful not to break the watermelon cubes.
  • Refrigerate for 10–15 minutes before serving for best flavor.
  • Serve chilled.

Notes

Use pre-chilled watermelon and cucumber for a crisp, cold salad.
