Tomato Bisque Recipe

Tomatoes are pureed with garlic, onions, and celery and cooked with heavy cream and honey.

Ingredients
  

  • 1 tablespoon butter
  • ¼ cup onions chopped
  • 1 clove garlic minced
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon dried basil
  • ¼ teaspoon salt
  • teaspoon chili powder
  • 1 14-ounce can diced tomatoes with juice
  • ½ cup chicken broth
  • 1 teaspoon honey
  • 2 tablespoon heavy cream

Instructions
 

  • Saute onions in butter in a soup pot on medium heat until softened.
  • Stir in garlic and seasonings and cook for 1 minute.
  • Add the tomatoes and broth to the pot. Bring to a boil and then reduce to a simmer, stirring occasionally for 20 minutes.
  • Whisk in the honey.
  • Puree the soup in a blender or use an immersion blender until the soup is smooth.
  • Return the soup to the pot, whisk in the cream. Serve hot.

Notes

SERVING SUGGESTION: Besides grilled cheese, crackers or crusty bread pairs well with soup.
