Taco Baked Potato

Tex-Mex seasoned taco meat is topped on a fluffy baked potato with a variety of tasty toppings!

Ingredients
  

  • 1 medium russet potato
  • 1-2 slices of bacon or 3 ounces of ground beef
  • ½ tablespoon tomato paste
  • 2 ½ tablespoons water

Taco Seasoning Group

  • ¼ teaspoon Chili Powder
  • 1/8 teaspoon Cumin
  • 1/8 teaspoon Onion Powder
  • A pinch of Garlic Powder
  • A pinch of Red Pepper Flakes
  • 1/8 teaspoon Oregano
  • Salt and pepper to taste

Instructions
 

  • Baked Potatoes Three Ways
  • OVEN: Pierce the potato with a fork all over and bake in a 425°F (220°C) oven for 40 minutes.
  • MICROWAVE: Pierce potato with a fork all over and microwave 5 minutes on full power. Turn over and microwave another 5 minutes.
  • AIR FRYER: Pierce potato with a fork all over and air fry at 400°F for 40 minutes.
  • Place taco seasoning ingredients in a jar with a tight-fitting lid and shake until fully blended.
  • Cook bacon or beef over medium heat in a skillet. Drain any fat.
  • Blend seasoning mixture, water, and tomato paste. Bring to a simmer and let simmer 5 minutes or until thickened.
  • Make a shallow cut horizontally across the baked potato and squeeze the two ends together until the potato opens up.
  • Place bacon or beef inside potato. Cover with taco filling and top with sour cream, salsa, cheddar cheese, jalapenos, sliced black olives, and green onions.
