  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano or Italian seasoning
  • For the Filling:
  • cups fresh spinach chopped
  • ½ cup crumbled feta cheese
  • 2 tablespoons cream cheese softened
  • 1 garlic clove minced
  • ¼ teaspoon red pepper flakes optional

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease a baking dish or oven-safe skillet.
  • In a mixing bowl, combine chopped spinach, feta, cream cheese, minced garlic, and red pepper flakes. Mix until well blended.
  • Using a sharp knife, cut a horizontal pocket in each chicken breast, being careful not to cut all the way through. Season both sides of the chicken with salt, pepper, garlic powder, and oregano.
  • Stuff each pocket with the spinach and feta mixture. Secure with toothpicks or kitchen twine if necessary.
  • For extra flavor and color, sear the stuffed chicken breasts in an oven-safe skillet with olive oil over medium heat for 2–3 minutes per side before baking.
  • Transfer the chicken to the baking dish (or keep it in the skillet if oven-safe) and bake uncovered for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F.
  • Let the chicken rest for 5 minutes before removing toothpicks and slicing. Serve hot with your favorite sides.

Notes

  • Make Ahead: Stuff and refrigerate chicken up to 24 hours in advance. Bake when ready.
  • Add More Veggies: Sautéed mushrooms or sun-dried tomatoes make a great addition to the filling.
  • Cheese Swap: Goat cheese or shredded mozzarella can be used in place of feta.
