- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano or Italian seasoning
- For the Filling:
- 1½ cups fresh spinach chopped
- ½ cup crumbled feta cheese
- 2 tablespoons cream cheese softened
- 1 garlic clove minced
- ¼ teaspoon red pepper flakes optional
Preheat your oven to 375°F (190°C). Lightly grease a baking dish or oven-safe skillet.
In a mixing bowl, combine chopped spinach, feta, cream cheese, minced garlic, and red pepper flakes. Mix until well blended.
Using a sharp knife, cut a horizontal pocket in each chicken breast, being careful not to cut all the way through. Season both sides of the chicken with salt, pepper, garlic powder, and oregano.
Stuff each pocket with the spinach and feta mixture. Secure with toothpicks or kitchen twine if necessary.
For extra flavor and color, sear the stuffed chicken breasts in an oven-safe skillet with olive oil over medium heat for 2–3 minutes per side before baking.
Transfer the chicken to the baking dish (or keep it in the skillet if oven-safe) and bake uncovered for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F.
Let the chicken rest for 5 minutes before removing toothpicks and slicing. Serve hot with your favorite sides.
