For the filling
- 1 pound ground beef
- 1 medium onion diced
- 2 cups frozen or canned corn drained
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 teaspoon Worcestershire sauce
- ½ cup beef broth
- Salt and pepper to taste
For the mashed potatoes
- 4 medium russet potatoes peeled and cubed
- 4 tablespoons unsalted butter
- ½ cup milk
- ½ cup shredded cheddar cheese optional
- Salt and pepper to taste
Prepare the Potatoes: Boil the cubed potatoes in salted water for about 15 minutes or until fork-tender. Drain and mash with butter, milk, and shredded cheddar (if using). Season with salt and pepper, and set aside.
Cook the Filling: Heat olive oil in a large skillet over medium heat. Sauté diced onions until soft, then add garlic and cook for 30 seconds. Add ground beef, breaking it apart as it cooks. Stir in the corn, Worcestershire sauce, and beef broth. Simmer until the mixture thickens slightly, about 5 minutes. Season with salt and pepper to taste.
Assemble the Pie: Preheat your oven to 400°F (200°C). Spread the beef and corn mixture evenly into a greased 9x13-inch baking dish. Top with the mashed potatoes, spreading them out to cover the filling completely. Use a fork to create ridges on the surface for added texture.
Bake: Place the dish in the oven and bake for 20-25 minutes, or until the top is golden brown and the filling is bubbly. For extra crispiness, broil the top for an additional 2-3 minutes.
