In a bowl mix together peanut butter, lime juice, vegetable broth, soy sauce, and cumin
Put chicken, onion and peppers in a freezer bag.
Dump peanut butter mixture over the chicken.
Seal freezer bag to freeze.
Defrost in fridge the night before.
Cook on low for 3-4 hours.
Serve over noodles or rice.
Top with peanuts, scallions, and cilantro.
