  • 4 Boneless Skinless Chicken Breasts
  • 1 Medium Red Bell Pepper Diced
  • 1 Medium Onion Chopped
  • 1/2 Cup Peanut Butter Creamy
  • 1 Lime Juiced
  • 1/2 Cup Vegetable Broth (or Chicken Broth)
  • 1/4 Cup Soy Sauce
  • 1/2 Tablespoon Cumin
  • Crushed Peanuts For Garnish
  • Scallions For Garnish
  • Cilantro For Garnish


  • In a bowl mix together peanut butter, lime juice, vegetable broth, soy sauce, and cumin
  • Put chicken, onion and peppers in a freezer bag.
  • Dump peanut butter mixture over the chicken.
  • Seal freezer bag to freeze.
  • Defrost in fridge the night before.
  • Cook on low for 3-4 hours.
  • Serve over noodles or rice.
  • Top with peanuts, scallions, and cilantro.
