Vegetable and Beef Chili

  • 1-2 tsp coconut oil
  • 1 clove garlic minced (or use minced garlic)
  • 1/4 medium Onion diced
  • 1/4 medium green bell pepper chopped
  • 1/4 medium Red Bell Pepper chopped (use any color)
  • 2 Tbsp Celery chopped
  • 1/2 lb Ground Beef
  • 1/2 Tbsp Chili Powder
  • 1/2 tsp Cumin
  • 1 Cup Diced Tomatoes
  • 3 Tbsp Small Red Potatoes
  • Sea Salt and Pepper to taste


  • Heat coconut oil in a pot over medium heat.
  • Add minced garlic, diced onions, chopped peppers and chopped celery and saute until onions are tender.
  • Add ground beef to the pot and cook until browned.
  • Add spices, diced tomatoes (with liquid) and tomato paste.
  • Mix all ingredients together and simmer on low for 15 minutes.
  • Season with salt and pepper as desired.
