Green Bean Salad with Almonds and Shallots
Fresh Green Beans
ends cut off and beans cut in half
peeled and thinly sliced
White Wine Vinegar
Salt & Pepper
Place the prepared shallot and white wine vinegar in to a tiny bowl so the shallot is coated. Sprinkle salt and pepper on the shallot and set aside.
Heat a medium pot of salted water to boil.
When water is boiling on high, add the prepared green beans to the pot. Stir frequently 2-3 minutes, until the green beans are bright green.
Immediately place the green beans in ice water - Make sure there are plenty of ice cubes. You want to shock the green beans. Cool completely.
Dry green beans completely. Mix together green beans, shallots and juices of the white wine vinegar, and the almonds. Sprinkle with salt and pepper and serve.
