Portobello Mushroom Pizza

Portobello mushroom filled with marinara, pepperoni, and covered in mozzarella cheese and topped with black olives.

Ingredients
  

  • 1 large portobello mushroom cap stem and gills removed
  • ½ tablespoon oil
  • ¼ teaspoon Italian seasonings
  • Salt and pepper to taste
  • 3 tablespoons marinara
  • Sundried tomatoes
  • 3 tablespoons shredded mozzarella cheese divided
  • 1 teaspoon sliced black olives

Instructions
 

  • Preheat oven to 375°F (190°C)
  • Place the mushroom on a baking sheet and brush 1 teaspoon of oil over the top of the mushroom. Bake for 5 minutes. Remove from oven.
  • Turn the mushroom over and sprinkle Italian seasonings on the inside.
  • Add marinara to the inside of the mushroom and layer with sundried tomatoes. Top with cheese and black olives.
  • Set oven to broil and broil the portobello mushroom pizza under the broiler until the cheese is melted and bubbly, about 7 minutes.
