Lemon Garlic Chicken
Simple, flavorful chicken breast baked and served over rice or with greens.

Meat thermometer to ensure the chicken reaches a safe internal temperature of 165°F. Small pot for preparing the rice (if included).
- 1 clove garlic minced
- 2 tablespoons lemon juice
- 1 tablespoon oil
- ½ teaspoon paprika
- ½ teaspoon Greek or Italian seasoning
- Salt and pepper to taste
- 8 ounces chicken breast
- ½ cup uncooked rice optional
- 1 tablespoon salted butter
- Lemon slices for garnish.
Preheat oven to 350°F (175°C).
Place chicken breast in a zippered bag and add remaining ingredients except rice, butter, and lemon.
Marinate chicken for 30 minutes in the refrigerator.
Remove chicken and discard marinade.
Place chicken on a small baking sheet and bake until completely cooked through, about 25 minutes, or when a meat thermometer reads 165°F.
Remove the chicken from the oven and cover it with a piece of foil to rest for 10 minutes.
While the chicken is baking, prepare the brown rice, per package directions. Stir in butter and fluff with a fork.
Transfer the brown rice to a plate, slice the chicken, and place on a plate with rice or greens. Garnish with lemon slices.
