Classic Meatloaf

- 1 tablespoon oil
- ¼ cup chopped onions
- 1 clove garlic minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 8 ounces ground beef
- ½ teaspoon Worcestershire sauce
- 1 large egg
- 3 tablespoons breadcrumbs
Glaze Ingredients
- ¼ cup ketchup
- 1 tablespoon brown sugar
Preheat oven to 350° F (175°C).
Saute onions in oil in skillet over medium heat until softened.
Stir in garlic, dried thyme, salt, and pepper. Cook, stirring occasionally for another minute. Remove skillet from the heat and set aside.
Place the ground beef in a medium-sized bowl and mix in seasoned onions and garlic. Add Worcestershire sauce, egg and breadcrumbs. Mix everything until fully combined.
Shape meat mixture into an oval and transfer to a lightly greased small baking dish and bake for 30 minutes.
While meatloaf is baking, whisk together ketchup and brown sugar in a small bowl.
Take meatloaf from the oven and brush glaze over the top. Bake another 15 minutes.
Remove meatloaf and allow to rest for 10 minutes before slicing.
Serving Suggestion: A side of mashed potatoes and peas pair well.
Note: Meatloaf freezes well. Consider doubling this recipe and freezing for another meal.
