Ingredients
  

For the Chicken Souvlaki:

  • pounds boneless skinless chicken thighs cut into 1-inch pieces
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • ½ cup cucumber grated and squeezed dry
  • 1 tablespoon lemon juice
  • 1 clove garlic finely minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill chopped (or 1 teaspoon dried dill)
  • Salt to taste

To Assemble:

  • 4 pita breads or flatbreads, warmed
  • 1 cup cherry tomatoes halved
  • 1 cup shredded lettuce
  • ½ red onion thinly sliced
  • crumbled feta cheese or sliced Kalamata olives Optional

Instructions
 

  • In a mixing bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken pieces and toss to coat. Cover and marinate in the fridge for at least 30 minutes or up to 4 hours.
  • While the chicken marinates, prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, lemon juice, garlic, olive oil, dill, and salt in a small bowl. Mix well, cover, and chill until ready to use.
  • Heat a skillet or grill pan over medium-high heat. Add the marinated chicken pieces and cook for 4–5 minutes per side, or until golden and cooked through (internal temperature should reach 165°F).
  • Warm the pita breads and layer with lettuce, cherry tomatoes, sliced red onion, and grilled chicken. Spoon tzatziki sauce over the top and add feta or olives if desired.
  • Fold the pita and serve immediately.

Notes

  • Chicken Option: You can use chicken breast, but thighs stay juicier and more flavorful.
  • Prep Tip: Squeeze grated cucumber through a clean towel to avoid watery tzatziki.
  • Meal Prep Friendly: Chicken and tzatziki can be made ahead for easy weekday lunches.
