Blueberry Cobbler

  • 1 1/4 Cups all purpose flour
  • 1/2 Cup sugar
  • 1/4 tsp salt
  • 1 1/2 tsp baking powder
  • 3/4 Cup Milk I used skim
  • 1/3 Cup butter melted
  • 2 Cups Fresh Blueberries
  • 1/3 Cup sugar
  • 1 tsp Vanilla Extract

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, whisk together the flour, ½ cup sugar, salt, and baking powder.
  • Stir in the milk and melted butter until the batter is just combined.
  • Pour the batter into a greased 9x9 baking dish and spread it evenly.
  • Evenly distribute the fresh blueberries over the batter.
  • Sprinkle the remaining ⅓ cup sugar over the top of the blueberries.
  • Drizzle the vanilla extract over everything.
  • Bake for 40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Let cool for 5–10 minutes before serving. Serve warm or at room temperature.

Notes

  • For a more tart flavor, add a squeeze of lemon juice over the berries before baking.
  • Can be made with frozen blueberries—just don’t thaw them first.
  • Serve with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
