Beef Stir Fry
Tender ground beef pan-fried with fresh vegetables in a light teriyaki sauce.

- 8 ounces ground beef
- Salt and pepper to taste
- ½ tablespoon oil
- ¼ cup mushrooms sliced
- ¼ cup onions sliced
- 1 small carrot chopped
- ¼ cup peas
- 1 clove garlic minced
- ⅛ teaspoon ground ginger
- 1 cup spinach
- 1 tablespoon soy sauce
- ½ teaspoon apple cider vinegar
- 1 cup cooked rice
Cook ground beef with salt and pepper, about 4 minutes. Remove beef from the pan and set aside.
Saute the mushrooms, onions, carrots, and peas in oil. Cook, stirring occasionally for 2 minutes.
Add the garlic and ginger and cook until fragrant, about 30 seconds.
Stir in spinach, soy sauce, and vinegar and cook until the spinach wilts.
Return the beef to the skillet and heat until stir fry is heated through.
Serve over rice.
