Beef Stir Fry

Tender ground beef pan-fried with fresh vegetables in a light teriyaki sauce.

Ingredients
  

  • 8 ounces ground beef
  • Salt and pepper to taste
  • ½ tablespoon oil
  • ¼ cup mushrooms sliced
  • ¼ cup onions sliced
  • 1 small carrot chopped
  • ¼ cup peas
  • 1 clove garlic minced
  • teaspoon ground ginger
  • 1 cup spinach
  • 1 tablespoon soy sauce
  • ½ teaspoon apple cider vinegar
  • 1 cup cooked rice

Instructions
 

  • Cook ground beef with salt and pepper, about 4 minutes. Remove beef from the pan and set aside.
  • Saute the mushrooms, onions, carrots, and peas in oil. Cook, stirring occasionally for 2 minutes.
  • Add the garlic and ginger and cook until fragrant, about 30 seconds.
  • Stir in spinach, soy sauce, and vinegar and cook until the spinach wilts.
  • Return the beef to the skillet and heat until stir fry is heated through.
  • Serve over rice.
