Beef and Black Bean Chili
Seasoned ground beef is simmered with tomatoes, onions, and black and red beans.

      - ¼ cup onion diced
- ¼ cup green bell pepper diced
- ½ teaspoon chili powder
- ¼ teaspoon cumin
- ¼ teaspoon paprika
- Salt and pepper to taste
- ¼ cup canned black beans drained and rinsed
- ¼ cup canned diced tomatoes with juice
- ¼ cup water or beef broth as needed
- Brown ground beef in a small saucepan on medium-high heat, breaking it into small pieces as it cooks. Drain excess fat. 
- Add peppers and onions to the pan and cook until they are tender. 
- Stir in seasoning to coat the beef and vegetables. 
- Add black beans and diced tomatoes (with their juice) to the chili and water or beef broth to desired consistency. 
- Reduce the heat to low, cover, and let the chili simmer 15-20 minutes, stirring occasionally. 
- Taste the chili and adjust the seasonings if necessary.  
- Serve with shredded cheddar cheese, sour cream, salsa, sliced avocados, chopped green onions, and fresh cilantro.
