BBQ Chicken Pizza

Pizza stone (or baking sheet) used for baking the pizza.
- 1 lb pizza dough 450 g
- 1 cup cooked shredded chicken 150 g
- ½ cup barbecue sauce 120 g
- 1½ cups shredded mozzarella cheese 170 g
- ½ cup sliced red onion 60 g
- ¼ cup chopped fresh cilantro 10 g
- 1 tablespoon olive oil 15 g
- 2 tablespoons cornmeal 20 g, for dusting
Preheat oven to 475°F (245°C).
Lightly dust a baking sheet or pizza stone with cornmeal.
Roll out the dough into a 12-inch circle.
Brush the dough lightly with olive oil.
In a mixing bowl, combine chicken with half of the barbecue sauce.
Spread remaining barbecue sauce evenly over the dough.
Top with half of the cheese, followed by the sauced chicken, onions, and remaining cheese.
Bake for 12–15 minutes, until the crust is golden and cheese is melted.
Remove from the oven and let rest for 3 minutes.
Sprinkle chopped cilantro over the top before slicing.
- Substitute rotisserie chicken for quick prep.
- Use smoked gouda instead of mozzarella for a richer flavor.
- Store leftovers in an airtight container for up to 3 days.
- Reheat on a baking sheet to maintain crispness.
