Ingredients
  

  • 1 lb pizza dough 450 g
  • 1 cup cooked shredded chicken 150 g
  • ½ cup barbecue sauce 120 g
  • cups shredded mozzarella cheese 170 g
  • ½ cup sliced red onion 60 g
  • ¼ cup chopped fresh cilantro 10 g
  • 1 tablespoon olive oil 15 g
  • 2 tablespoons cornmeal 20 g, for dusting

Instructions
 

  • Preheat oven to 475°F (245°C).
  • Lightly dust a baking sheet or pizza stone with cornmeal.
  • Roll out the dough into a 12-inch circle.
  • Brush the dough lightly with olive oil.
  • In a mixing bowl, combine chicken with half of the barbecue sauce.
  • Spread remaining barbecue sauce evenly over the dough.
  • Top with half of the cheese, followed by the sauced chicken, onions, and remaining cheese.
  • Bake for 12–15 minutes, until the crust is golden and cheese is melted.
  • Remove from the oven and let rest for 3 minutes.
  • Sprinkle chopped cilantro over the top before slicing.

Notes

  • Substitute rotisserie chicken for quick prep.
  • Use smoked gouda instead of mozzarella for a richer flavor.
  • Store leftovers in an airtight container for up to 3 days.
  • Reheat on a baking sheet to maintain crispness.
