Baked Chicken Caprese

Baked chicken breast in a balsamic glaze sauce with tomato, basil, and mozzarella cheese.

Equipment

  • Baking dish used to hold the chicken while it bakes and melts the mozzarella
  • Chef's knife for slicing tomatoes and preparing ingredients
  • Cutting board for prepping chicken and vegetables
  • Tongs for handling the chicken breasts

Ingredients
  

  • 8 ounces boneless skinless chicken breast
  • ½ tablespoon oil
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 Roma tomato quartered
  • cup sliced red onions
  • 1 tablespoon balsamic vinegar
  • ½ cup shredded mozzarella cheese

Instructions
 

  • Preheat oven to 400°F (200°C)
  • Place sliced onions on the bottom of a small baking dish. Set the chicken breast on the onions and drizzle with oil, Italian seasoning, salt, and pepper.
  • Place the quartered tomatoes around the chicken.
  • Drizzle the balsamic vinegar over chicken and vegetables and bake for 20 minutes depending on the thickness of your chicken, or until a meat thermometer reads 165°F.
  • When the chicken is fully cooked, sprinkle Mozzarella cheese over the chicken. Bake another 5 minutes or until the cheese has melted.
