Baked Chicken Caprese
Baked chicken breast in a balsamic glaze sauce with tomato, basil, and mozzarella cheese.

Baking dish used to hold the chicken while it bakes and melts the mozzarella Tongs for handling the chicken breasts
- 8 ounces boneless skinless chicken breast
- ½ tablespoon oil
- ½ teaspoon Italian seasoning
- Salt and pepper to taste
- 1 Roma tomato quartered
- ⅓ cup sliced red onions
- 1 tablespoon balsamic vinegar
- ½ cup shredded mozzarella cheese
Preheat oven to 400°F (200°C)
Place sliced onions on the bottom of a small baking dish. Set the chicken breast on the onions and drizzle with oil, Italian seasoning, salt, and pepper.
Place the quartered tomatoes around the chicken.
Drizzle the balsamic vinegar over chicken and vegetables and bake for 20 minutes depending on the thickness of your chicken, or until a meat thermometer reads 165°F.
When the chicken is fully cooked, sprinkle Mozzarella cheese over the chicken. Bake another 5 minutes or until the cheese has melted.
