Beef and Black Bean Chili

Seasoned ground beef is simmered with tomatoes, onions, and black and red beans.

Ingredients
  

  • ¼ cup onion diced
  • ¼ cup green bell pepper diced
  • ½ teaspoon chili powder
  • ¼ teaspoon cumin
  • ¼ teaspoon paprika
  • Salt and pepper to taste
  • ¼ cup canned black beans drained and rinsed
  • ¼ cup canned diced tomatoes with juice
  • ¼ cup water or beef broth as needed

Instructions
 

  • Brown ground beef in a small saucepan on medium-high heat, breaking it into small pieces as it cooks. Drain excess fat.
  • Add peppers and onions to the pan and cook until they are tender.
  • Stir in seasoning to coat the beef and vegetables.
  • Add black beans and diced tomatoes (with their juice) to the chili and water or beef broth to desired consistency.
  • Reduce the heat to low, cover, and let the chili simmer 15-20 minutes, stirring occasionally.
  • Taste the chili and adjust the seasonings if necessary.
  • Serve with shredded cheddar cheese, sour cream, salsa, sliced avocados, chopped green onions, and fresh cilantro.

Notes

Serving Suggestion: Use Frito Scoops as a utensil.
