Beef and Black Bean Chili
Seasoned ground beef is simmered with tomatoes, onions, and black and red beans.

- ¼ cup onion diced
- ¼ cup green bell pepper diced
- ½ teaspoon chili powder
- ¼ teaspoon cumin
- ¼ teaspoon paprika
- Salt and pepper to taste
- ¼ cup canned black beans drained and rinsed
- ¼ cup canned diced tomatoes with juice
- ¼ cup water or beef broth as needed
Brown ground beef in a small saucepan on medium-high heat, breaking it into small pieces as it cooks. Drain excess fat.
Add peppers and onions to the pan and cook until they are tender.
Stir in seasoning to coat the beef and vegetables.
Add black beans and diced tomatoes (with their juice) to the chili and water or beef broth to desired consistency.
Reduce the heat to low, cover, and let the chili simmer 15-20 minutes, stirring occasionally.
Taste the chili and adjust the seasonings if necessary.
Serve with shredded cheddar cheese, sour cream, salsa, sliced avocados, chopped green onions, and fresh cilantro.
Serving Suggestion: Use Frito Scoops as a utensil.
