Instructions
Preheat oven to 350 degrees
Mix together egg, applesauce and vanilla.
Add brown sugar and blend well.
Add oats, flour, baking powder, baking soda, salt, cinnamon and nutmeg. Mix well.
Add chocolate chips and raisins. Mix well.
Add zucchini. Mix well.
Spray a non-stick cookie sheet with pan spray. Drop 1 1/2 inch balls of batter on the treated cookie sheet.
Bake for 12-14 minutes.
Notes
1/2 cup of walnuts can be used in place of the raisins or the chocolate chips.
