Healthy Zucchini & Summer Squash Soup Recipe

Ingredients
  

  • 1 Tablespoon coconut oil
  • 1/2 Medium Onion Chopped
  • 4 Large Garlic Cloves Peeled
  • 1 Teaspoon Salt
  • 1 Teaspoon Powdered Ginger
  • 1 Teaspoon Coriander
  • 1/2 Teaspoon Ground Pepper
  • 2 Medium Zuchinni Chopped Can also use shredded frozen
  • 2 Medium Summer Squash Chopped Can also use shredded frozen
  • 4 Cups Chicken Broth

Instructions
 

  • Saute onion and garlic in coconut oil. Do NOT brown.
  • Add remaining ingredients and simmer until zucchini and summer squash are very tender
  • Transfer to a blender and puree until smooth
