Healthy Zucchini Breakfast Cookies

Ingredients
  

  • 1 Cup Zucchini Grated
  • 1/3 Cup Unsweetened Apple Sauce
  • 1 Egg Beaten
  • 1/3 Cup Brown Sugar
  • 1 Teaspoon Vanilla
  • 1 1/2 Cups Oats
  • 1 Cup Flour
  • 1/2 Teaspoon Baking Powder
  • 1/4 Teaspoon Baking Soda
  • 1/2 Teaspoon Cinnamon
  • 1/4 Teaspoon Nutmeg
  • 1/2 Teaspoon Salt
  • 1/2 Cup Semi-Sweet Chocolate Chips
  • 1/2 Cup Raisins

Instructions
 

  • Preheat oven to 350 degrees
  • Mix together egg, applesauce and vanilla.
  • Add brown sugar and blend well.
  • Add oats, flour, baking powder, baking soda, salt, cinnamon and nutmeg. Mix well.
  • Add chocolate chips and raisins. Mix well.
  • Add zucchini. Mix well.
  • Spray a non-stick cookie sheet with pan spray. Drop 1 1/2 inch balls of batter on the treated cookie sheet.
  • Bake for 12-14 minutes.

Notes

1/2 cup of walnuts can be used in place of the raisins or the chocolate chips.
