Zucchini Frittata

- 1 Tablespoon coconut oil cold pressed
- 1 Medium Zucchini sliced
- 3 Eggs whipped
- Cheese grated
- Spices salt, pepper, cumin, basil, or any combination you wish
Melt coconut oil in a skillet. I use cast iron.
Add sliced zucchini and cook until soft.
Pour in the whipped eggs. Cook until eggs are almost set, stirring occasionally.
Add grated cheese and cover until melted.
Adding extra veggies would be great for this dish -- onions, carrots, peapods, broccoli! Maybe throw in some garlic.
For cheese I used cheddar and parmesan. Any combination of cheese would be fantastic.
I like zip in my meals so adding a few drops of green Tabasco was perfect. I love that stuff!
