Weight Watchers Egg and Feta Mini Stuffed Pepper Appetizer

Ingredients
  

  • 1 Pound Mini Bell Peppers
  • 4.5 Ounces Fat Free Crumbled Feta Cheese
  • 2/3 Cups Liquid Egg Whites
  • Black Pepper (optional)
  • Pan Spray

Instructions
 

  • Cut the top off peppers and remove the seeds and membranes.
  • Mix together egg, feta, and black pepper.
  • Scramble egg mixture in a large frying pan as you normally would cook scrambled eggs.
  • Stuff peppers with the egg mixture.
  • Add pan spray to frying pan and put heat on medium.
  • Brown peppers on each side for 2-3 minutes until slightly brown.
  • Serve hot or cold plain or with dipping sauces of your choice.
