Chocolate Lava Cake

- 1 whole egg room temperature
- 1 whole egg yolk room temperature
- 2 tablespoons white sugar
- 5 tablespoons butter divided
- 1/3 cup dark chocolate chips
- ½ teaspoon instant espresso
- 1 Tbsp flour
Preheat oven to 450°F (230°C).
Generously coat a 4x6” dish with nonstick cooking spray.
Using a mixer, whip egg, egg yolk, and sugar until fluffy and light yellow, about 2 minutes. Set aside.
Melt butter and chocolate chips in a microwave safe bowl in 30 second intervals, stirring between intervals (about 45 seconds total).
Stir instant espresso, flour, and the chocolate mixture into the whipped eggs and sugar on low speed using the electric mixer.
Scrape the batter into the prepared dish and bake for 8 - 10 minutes. Remove the cake when the edges are set but the center is still soft.
