Chocolate Lava Cake

Dark chocolate chip s and espresso baked into a decadent dessert.

Ingredients
  

  • 1 whole egg room temperature
  • 1 whole egg yolk room temperature
  • 2 tablespoons white sugar
  • 5 tablespoons butter divided
  • 1/3 cup dark chocolate chips
  • ½ teaspoon instant espresso
  • 1 Tbsp flour

Instructions
 

  • Preheat oven to 450°F (230°C).
  • Generously coat a 4x6” dish with nonstick cooking spray.
  • Using a mixer, whip egg, egg yolk, and sugar until fluffy and light yellow, about 2 minutes. Set aside.
  • Melt butter and chocolate chips in a microwave safe bowl in 30 second intervals, stirring between intervals (about 45 seconds total).
  • Stir instant espresso, flour, and the chocolate mixture into the whipped eggs and sugar on low speed using the electric mixer.
  • Scrape the batter into the prepared dish and bake for 8 - 10 minutes. Remove the cake when the edges are set but the center is still soft.
